Green Pea and Don de Dieu Soup


Serves 6

- 1 small leek

- 1 onion

- 1 stick of celery

- 1 carrot

- 4 oz. ham

- 1 tsp. butter

- 2 cups split green peas

- 6 cups fat-skimmed chicken bouillon

- Salt and pepper to taste

- 1 tsp. butter

- 2 cups shredded lettuce

- 2 tbsp. fresh parsley, chopped

- ½ cup Don de Dieu beer 



  • On a cutting board, dice leeks, onions, celery, carrot, and ham. Melt butter in a large saucepan, gradually increasing heat. Add vegetables and cook gently until slightly soft, then add peas and ham. Add chicken bouillon and simmer 35 to 40 minutes, stirring frequently. Season to taste. Purée in blender.
  • Melt butter in a pan over low heat and lightly sauté the shredded lettuce. Moisten with beer and simmer on low heat 1 minute.
  • Ladle soup into bowl and garnish with lettuce, beer, and parsley.
