Cinnamon Peach Upside-Down Cake with Don de Dieu

Ingredients
Cinnamon Syrup
- 12 oz. Don de Dieu beer
- ¾ cup maple syrup
- Cinnamon to taste
Cake Batter
- 1 egg
- ½ cup sugar
- 1/3 cup butter, softened
- 1 cup all-purpose flour
- 2 tsp. baking powder
- Pinch of salt
Assembly
- 3 peaches, peeled and halved
- ½ tsp. ginger, grated
- Zest of 1 lime
Decoration
- Beer custard
- Pomegranate seeds or berries
Directions
Cinnamon Syrup
Bring beer, cinnamon, and maple syrup to a boil in a saucepan and reduce to a thick syrup. Set aside.
Cake Batter
Whip egg and sugar together in a bowl with an electric mixer until white. Add butter, flour, baking soda, salt, and milk, mixing well. Set aside.
Assembly
Preheat oven to 350°F. Butter 6 custard cups. Place one peach half at the bottom of each, then sprinkle with grated ginger and lime zest, cover with cake batter, and drizzle with cinnamon syrup. Bake 15 to 20 minutes. Unmold and serve on a bed of custard. Garnish with pomegranate seeds or berries.
