Trois Pistoles Rabbit Stew
Serves 6
Prep time: 25 to 30 minutes
Cook time: 2 to 2.5 hours
Ingredients
Stew
- 1¼ lb. rabbit cut into pieces
- 1 lb. beef, cubed
- 1/3 cup salt pork, cubed
- ½ cup onions, chopped
- Salt and pepper to taste
- 3 cups Trois-Pistoles beer
Dough
- 1 cup flour
- 1 tsp. baking powder
- ½ cup lard or shortening
- Pinch of salt
- ¼ cup water
Directions
Stew
Combine all stew ingredients in a pot. Cover with beer. Bring to a boil and simmer for 2 to 2½ hours. Add water if necessary during cooking time.
Dough
Sift together flour and baking powder. Cut in lard until crumbly. Dissolve salt in a very small amount of water. Add water to flour mixture and stir just enough to form dough. Shape dough into a ball and roll out on a floured surface to 1/8 inch thickness. Cut into 1 inch squares. Cover surface of stew with squares 30 minutes before end of cooking time. Check seasoning. Serve hot.
