• 1 cup Maudite Unibroue
• 150 g. maple-flavored Oka cheese, grated
• 150 g. Louis Cyr cheese (Fromagerie Bergeron), grated
• 150 g. Jarlsberg cheese (similar to Emmental cheese), grated
• 1 tablespoon cornstarch
• 1 garlic clove, cut in half
• Juice of ½ lemon
• Freshly ground black pepper, to taste

Side dishes

• Baguette bread pieces, cut into chunks
• Blanched asparagus
• Blanched Brussels sprouts
• Slices of ham
• Prosciutto

• In a large bowl, mix the grated cheeses with the cornstarch and set aside.
• Rub the inside of a small saucepan with the garlic clove.
• Over medium heat, heat the beer for 2 minutes.
• Incorporate the cheeses while stirring.
• Simmer for 5 minutes over low heat, stirring occasionally.

• Add the lemon juice, season with pepper, and mix.
